George Roe & Co helped build the golden era of Irish whiskey in the 19th century. Their distillery at Thomas Street in Dublin extended over 17 acres and they were Ireland's largest exporter of whiskey. As neighbours for hundreds of years George Roe & Co and Guinness were the two biggest names at the heart of Dublin's historic brewing and distilling quarter.

Now, decades after the Roe distillery finally closed its gates, Irish whiskey is on the cusp of another golden age. Today there is a resurgence of interest in Irish Whiskey and the Thomas Street area is once again becoming a vibrant hub of brewing and distilling in Dublin.

Roe & Co is at the heart of this new vibrancy, celebrating the memory of George Roe, a true pioneer who helped build the original golden era of Irish whiskey.

About the role

As a Distiller at Roe and Co. Distillery, you'll provide support to the Head Distiller and site teams in the delivery of our new make spirit across our shift system.

This role will require working in shifts to ensure continuous support for the site's operations.

Key Responsibilities:
  • Help to produce new make spirit on site safely, to the highest quality and according to work instructions and quality parameters, delivering required shift outputs on time to the related efficiency KPIs.
  • Record and input production related data into site systems and metrics.
  • Demonstrate commitment to outstanding teamwork and collaboration, proactively identifying and driving business improvements with the team.
  • Demonstrate total commitment to the Health and Safety policies onsite, and pro-actively pursue a safe and professional approach to all aspects of individual and team activity.


As part of this role, we'll need your commitment to our sustainability agenda through site Energy, Water and Carbon KPIs and for you to collaborate in driving the performance outcomes that the team needs to deliver.

About You

We're looking for an individual with a positive outlook, who can channel energy into finding opportunities and solutions and building great relationships with team-members and contractors.

This position would suit an engaged and pro-active individual with an aptitude for technical problem solving. Previous distillery experience is not essential, but it would be beneficial to have experience of an audited manufacturing environment in the food/beverage/pharmaceutical industries.

Our plant is partially automated, and the person coming into this role will have the aptitude and desire to develop a deep knowledge and understanding of both manual and automated production processes in a distillery environment.
