About the Role:
The Guinness Open Gate Brewery combines over 260 years of Irish brewing experience with American beer creativity! Following the opening of the Baltimore Open Gate Brewery in 2018, Guinness opened a second location in Chicago in 2023. The Chicago location includes an experimental brewery, taproom, and restaurant. Here we take everything we've learned from brewing in Ireland and Baltimore, and up the ante with new recipes and ingredients. With thousands of guests and multiple tap lines, we get to share our innovations with Chicago. This is an outstanding opportunity to be a creative and active member of the brewing community!

Purpose of Role:
The Chicago Brewing team will be responsible for brewing, cellaring, kegging, off-site canning in Plainfield and quality operations for beer served on site. They will be a self-directed team that works closely with the Management and Baltimore team for reporting, ideation and recipe development. The brewing team will be responsible for their own raw material ordering, scheduling, record keeping and SAP transactions. Along with brewing beer, the team will serve as the face of the Guinness Brewery in Chicago. They'll participate in marketing activities including content collection and social media. We are looking for motivated, passionate, self-starting brewers to brew outstanding beers across a range of styles. This is a high-profile position and attention to detail is a must.

Role Responsibilities:
  • Lead with safety
  • Ownership of the beer from formulation to glass
  • Thorough adherence to quality standards
  • Hands on operation of the 10 bbl brewing system
  • In process quality analysis and interpretation of results
  • KPI reporting
  • Participation in sensory panel and follow-up
  • Raw material inventory, receiving and usage and record keeping
  • Diagnose and troubleshoot problems
  • Develop and update SOPs
  • Recipe development, innovation and ideation
  • Lead and participate in 5S, Focused Improvement projects and Root Cause Problem Solving


Qualifications and Experience Required:
  • Minimum 3 years commercial brewing experience
  • Formal brewing qualifications
  • BS in Science/Engineering
  • Experience with operating small- and large-scale brewing operations
  • Recipe formulation a plus


Physical demands and Work Environment

Brewers will be on their feet in the brewery for long periods of time. They will be required to stand, walk and climb as well as crouch and kneel. They will be required to operate valves, move hoses and handle boxes and bags. The employee will be required to lift and/or move 50 pounds.

The brewers will be working in the breweries and cellar areas which will be hotter or colder than typical office environments. They may also be near hot liquids, airborne particles, chemicals and moving machinery.

This may include shift work; start times may vary. Occasional weekends and holidays as required.
