We are looking for an experienced Purchasing | Cost Controller who will be responsible for monitoring the purchasing, receiving, inventory tracking, and storage of inventories. You must have previous experience with high standards, working with a large, diverse team and also great attention to detail.

Main Responsibilities

- Maintain Vendor relationships
- Manage Receiving Staff (ex. Storage Clerk) in all aspects including, recruiting, training and work schedules
- Attend department meetings (WOM)
- Check with receiving by way of audits: current deals are being exercised; costs and budgets are being upheld
- Comply and ensure team’s compliance with Purchasing & Finance guidelines
- Responsible for monthly stock counting and reporting
- Input stock count into Inventory Management Platform, input transactions, coordinate with accounting
- Produce final COS for entire house, including MiniBar, Events, Club, Bill&Hold
- Responsible for daily ordering and purchasing
- Order, by way of stock check against stock pars; i.e. liquor, bar foods, dry goods, kitchen misc, etc.
- Order, by way of request and approval from GM and Club Manager: CGS needs and misc. smallwares
- Check and approve purchase orders prior to review by Finance and General Manager
- Check stock counts in all stock rooms against posted counts and against pars
- Checkup on floor pars for all CGS, report any trouble with stock needed vs. budget to GM, Club Manager, and Storage Clerk
- Create ongoing inventory of obsolete items, intended depletion of items prior to brand changes, etc.
- Update stock sheet for entire property: on floor/in storage/on order/over-behind par
- Equipment maintenance (beer lines, espresso machines, etc.)
- Purchasing all supplies for food and beverage department, including paper, pens, office supplies, to go boxes, bar supplies
- Maintaining proper inventory levels for all F&B supplies
- Processing invoices, managing deliveries
- Controlling CGS and maintaining proper inventory pars
- To carry out any other reasonable request as directed by your General Manager
Requirements
- Minimum of 2 years experience in similar position in Restaurant or full service Hotel
- Ability to communicate, both verbally and written effectively with guest, vendors and co-workers and subordinates
- Proven track record of leading a professional, efficient, high quality, service-oriented operation
- Knowledge of NYS sanitation regulations as it pertains to storage and inventory
- Must be highly organized, efficient and detail oriented
- Strong computer skills including Excel
