Principal Function:

As a Sous Chef II at Shedd Aquarium, you will be instrumental in the culinary operations across our diverse quick-service restaurant spaces, grab-and-go concessions, line service, pastry program, and banquet functions. This role is perfect for a passionate culinary professional who is enthusiastic about food presentation, guest service, and team mentorship. Reporting to the Executive Chef, you will ensure consistent food quality and presentation while upholding Sodexo Live!'s standards for food safety, sanitation, and guest satisfaction.

The Sous Chef II position is an entry-level supervisory role within our kitchen, responsible for guiding culinary team members through essential cooking techniques, plating, and overall food service execution. You will manage various kitchen stations-hot, cold, and bakery-ensuring a smooth, efficient flow of operations while creating appealing and flavorful dishes. You will also assist with supervising food preparation and supporting culinary staff training, setting a standard for excellence in every aspect of service.

Essential Responsibilities:

  • Participate as part of Culinary Leadership Team to manage a culinary department for the preparation of foods served to the customers in a consistent and timely manner.
  • Ensure Kitchen Safety and Sanitation conforms to all Sodexo Live!, regulatory, and governmental standards to provide a safe workplace producing high quality food products.
  • Contribute to goal of 100% customer satisfaction through personal commitment to customer service and leading the culinary team by example.

Qualifications/Skills:

Required:

  • Minimum of 2 years in a food preparation position.
  • Ability to promote and participate in a team environment.
  • Ability to understand written and oral direction and to communicate same with others.

Preferred:

  • Degree from a postsecondary culinary arts training program.
  • ACF Professional Certification.

Other Requirements:

  • Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.
  • Hours may be extended or irregular to include nights, weekends and holidays.
