Sodexo is seeking a Food Production Manager 3 for Suny Downstate University Medical Center in Brooklyn, NY. Suny Downstate University Medical Center is a 200-bed acute care that serves the needs of nearly 3 million people.
The Food Production Manager 3 will report to the General Manager, manage the back of house staff, provide training and develop a team of up to 25 frontline union staff. Prior purchasing experience and union management experience in healthcare required.

What You'll Do
The ideal candidate:
- supervises the day-to-day operations, primarily food production for patient meals, cafe and catering
- purchases all raw materials for the department
- responsible for inventory management, product storage and distribution
- accountable for the safe food handling of all products in the kitchen
- utilizes Sodexo's Food Management Process for forecasting, portion controls, recipe compliance and cost containment
- participates in the planning, preparation, presentation and execution of catering events
- will also oversee patient meal assembly
- conducts quality assurance audits-tray assessments, tray accuracy audits, pre-meal meetings and taste and temp panels
- conducts daily culinary planning meetings with production staff
- conducts safety audits
- conducts safety and skills in-service for staff
- ensures Sodexo standards are met

- food production experience in a hospital
- knowledge of nutrition and specialized diets
- experience with oversight of diet offices; and/or
- strong management skills
- prior union management
- prior client relations
- prior retail operations

Qualifications & Requirements
Minimum Education Requirement - Associate's Degree or equivalent experience
Minimum Management Experience - 2 years
Minimum Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
