We are seeking a talented and dynamic Chef de Cuisine to lead the culinary team at Harriman's Piedmont Grill, our signature fine dining restaurant. In this leadership role, you will be responsible for executing the restaurant's culinary vision while managing all day-to-day food operations. As Chef de Cuisine, you will oversee food preparation, purchasing, receiving, storage, and presentation, ensuring consistently high standards of quality and service.
Key Responsibilities:
- Culinary Leadership: Execute the culinary vision for Harriman's Piedmont Grill, ensuring creativity and innovation in all dishes, while highlighting local ingredients and seasonal offerings.
- Team Leadership: Supervise, mentor, and develop the culinary team. Lead by example, stepping in to assist with cooking and food prep as needed. Conduct training, provide feedback, and foster a collaborative work environment.
- Operational Oversight: Manage food prep areas, purchasing, storage, and inventory. Ensure smooth and efficient kitchen operations, while adhering to health, safety, and cleanliness standards.
- Financial Management: Help drive financial success by maximizing revenue, controlling costs, and managing labor efficiency.
- Guest Experience: Ensure every guest receives exceptional culinary experiences by partnering with the General Manager to create anticipatory service.
- Compliance: Conduct safety and sanitation inspections. Ensure adherence to all local, state, and federal health and safety regulations.
- Collaboration: Maintain effective communication with other resort departments to ensure a seamless service experience. Participate in relevant meetings to relay details and foster a cooperative environment.
Job Requirements:
- Experience: At least two years in a culinary leadership role within a luxury hotel, resort, or fine dining restaurant. Experience in hands-on operations, team management, financial oversight, and regulatory compliance.
- Education & Certification: Culinary degree or accredited apprenticeship preferred. Must possess ServSafe Manager Certification and maintain required kitchen certifications.
- Skills:
- Strong knife skills and proficiency in various cooking techniques and kitchen equipment.
- Ability to create and follow standardized recipes and manage inventory databases.
- Proficient in Microsoft Office (Word, Excel, Outlook).
- Physical Demands: Ability to work in a physically demanding environment, lifting up to 50 lbs, standing for long periods, and working in varying weather conditions. Ability to kneel, squat, climb, stretch, and move with agility.
- Flexibility: Willingness to work flexible hours, including weekends, early mornings, evenings, and holidays.
- Communication: Excellent verbal and written communication skills in English.
- Other: Valid Virginia driver's license and adherence to Salamander's driver requirements.
