Essential Job Functions

  • Taste & Create: Taste, taste, taste. We sample the food we create to ensure excellence in every dish.
  • Preparation & Production: Plan, prep, set up, and provide quality service for all pastry kitchen production, including menu items provided by the outlet kitchen.
  • Daily Prep Lists: Build and organize prep lists, prioritize tasks based on operational needs.
  • Team Oversight: Guide and mentor Pastry Cooks, acting as a supervisor in the absence of the Pastry Chef.
  • Menu Development: Support the Pastry Chef in building and developing creative menus.
  • Creative Freedom: Exercise creativity when developing new pastry items and desserts.
  • Inventory & Ordering: Assist with department ordering and inventory management, ensuring efficient stock levels.
  • Recipe Adherence: Follow established recipes and plating guides to the letter, ensuring consistency and quality.
  • Work Environment: Maintain a positive, collaborative work environment.
  • Station Organization: Keep your station and equipment clean, organized, and in excellent working condition.
  • Mise en Place: Complete mise en place to the satisfaction of the Executive Chef and Pastry Chef.
  • Process Adherence: Follow all established processes and procedures for consistency and quality.
  • Team Communication: Communicate effectively with internal customers, including stewards and service staff.
  • Product Rotation: Properly rotate products in the walk-in cooler to ensure freshness.
  • Sanitation: Maintain a clean and sanitary workstation, following state health and sanitation regulations.
  • Efficiency: Work quickly and efficiently to set up your workstation and manage tasks simultaneously.
  • Multi-tasking: Ability to handle multiple tasks under pressure while maintaining a high level of professionalism.
  • Attention to Detail: Maintain a clean, neat, and organized workspace.
  • Recipe Modification: Adjust recipes as needed, ensuring consistency in taste and presentation.

Education & Experience

  • High school diploma or equivalent vocational training certificate required.
  • Minimum of 3 to 5 years of experience in pastry preparation.
  • Culinary school degree preferred but not required.
  • Sanitation Certificate required.
  • Spanish-speaking skills are a plus.
  • Ability to communicate in English with guests, coworkers, and management.
  • Basic math skills necessary for recipe scaling and inventory management.

Physical Demands

  • Work Environment: Most tasks are performed indoors in moderate temperatures, but you must be able to work in extreme temperatures (freezers at -10°F and kitchens at +110°F).
  • Mobility: Must be able to stand and exert well-paced mobility for at least 8 hours per shift. Walking and standing are required throughout the day.
  • Physical Agility: Ability to bend, stoop, squat, and stretch to fulfill cleaning and maintenance tasks.
  • Strength: Must be able to lift up to 50 lbs regularly and push/pull carts and equipment weighing up to 250 lbs.
  • Manual Dexterity: Requires the ability to use and operate kitchen equipment efficiently.
  • Stress Management: Ability to work effectively in a fast-paced environment, communicate clearly with others, and remain composed under pressure.
  • Varied Activity: Must be able to adapt to changing activities and manage interruptions as they arise.
